Our kitchen teams at Som Saa and Kolae have now both had masterclasses with Michael. They’ve been excellent. Michael’s knowledge and skill are immediately obvious, as is his deep understanding of both the chef and supplier roles.

The masterclasses have deepened our understanding of the seafood we use and helped us deliver an even better product in the restaurants. We’ll definitely be continuing to involve Michael in our team training going forward.

Michael catered our corporate summer party for 12 guests on a boat, no less, and delivered an unforgettable Italian-inspired feast that truly wowed everyone. We had a brilliant session with Michael running a fish butchery and cooking workshop for our team at the restaurant. In a short space of time, he covered a wide range of filleting and preparation techniques, showed us smart ways to use offcuts for stocks and sauces, and explored thoughtful, practical ways of working fish into Greek-inspired dishes.

 

Before the session, Michael took the time to understand how we cook, the dishes we love from Greece, and the fish we typically use. His deep understanding of fish, sustainability, and seasonality helped us think more carefully about choosing the right fish at the right time of year. Drawing on his experience and travels, he created three standout dishes inspired by meals he had eaten in Greece that felt genuinely relevant to our kitchen. The whole session was hands-on, informative, and great fun for the team.

On the day of the class Mike brought all the equipment needed and set up the kitchen whilst we relaxed with a drink, during the class he patiently explained each step and made sure that my 3 children could participate in a safe age appropriate way. When the fish prep and class were finished we all had some time to get cleaned up while Mike cooked a beautiful meal using all our ingredients. Everything was delicious and I cannot recommend Mike enough if you are planning a relaxed, inclusive event at home. We all learnt a lot and ate the most amazing meal at the end.
